Chia seeds are one of the best plant-based sources of omega-3 fatty acids. They are high in protein and fibre which help keep you full longer aiding in weightloss… Which is why I decided to make this. This recipe is great for busy parents or if you dont have a lot of time in the morning. Just set it the night before and in the morning its easy to take with you on the go.
Easy No-bake Chia Seed Pudding

?1 cup almond milk(or dairy free milk of choice)
?1/4 cup chia seeds
?2 Tbsp maple syrup(or sweetener of choice)
?1 tsp ground nutmeg
?1 tsp ground cinnamon
?1 tsp pure vanilla extract
Mix all together and pour into a mason jar. It will be liquidy at first but once you leave it in the fridge a few hours (preferably over night) the chia will expand soaking up most of the milk leaving a pudding like consistency.

Once I took it out the fridge the next day I simply blended some frozen mango in a nutribullet with a tiny bit of water and poured it on top. Then I topped it with a few cocao nibs, shredded coconut and pumpkin seeds.
Feel free to modify the recipe to your liking. Originally I used 1 TBSP of maple syrup but it wasnt sweet enough for me so I added one more. You can also play with the milk to chia ratio for a thinner or thicker pudding. Play with the toppings, add blueberries and lime zest or diced mangos with some peaches.
